Evaluating the Influence of Moisture on the Microstructure of Objects by Using Scanning Electron Microscopy

Abstract

Inulin is a naturally occurring carbohydrate reserve in more than 30,000 plants, made up of a chain of fructose molecules and a terminal glucose molecule.  The objective of this research work was to evaluate the influence of moisture on the microstructure of an inulin powder, obtained from spray drying an inulin concentrate extract from chicory roots. The analysis of the structure of the material in a scanning electron microscope demonstrated its high higroscopicity.
